Even if they have exceptional ageing potential, we recommend tasting Sauternes from their earliest youth.
They do not have tannic astringency and their aromatic complexity is therefore fabulous!

The logo distinguishes wines that, to our knowledge, do not use synthetic phytosanitary products and have a responsible environmental approach without displaying the European organic label on their labels.

These may include wines in the process of official organic conversion, in private certification (Nature et Progrès, Bio Cohérence...), in biodynamics (Demeter, Biodyvin) or wines that have decided not to display their certification.

In its 10 ha vineyard on the south-facing slopes of Fully, it seeks to express as well as possible the typicity and authenticity of each grape variety through ultra attentive viticulture (biodynamic since 2003).

    Xavier Copel (the oenologist behind Primo Palatum, whose discontinuation we regretted in 2007) took advantage of the greatness of the 2016 vintage to return under his own name with a new range of 6 red wines, from Bordeaux to Spain. And always with the same specifications: to produce wines that are fine, precise, complex and above all representative of their terroir. To achieve this, it relies on a long-term partnership with only one winegrower per appellation (such as Château Le Cèdre in Cahors).

    Xavier Copel has already made his name in the Bettane&Desseauve guide "Careful, elegant, charming wines, whose only defect is the small quantity produced" [only 1200 to 1800 bottles per vintage].

    Plot of very old vines of 80 years old, 100% tempranillo, terraced vineyard on the southern flank of Rioja Alavesa, where the altitude (577 m) gives the wines finesse and length. Uncertified organic viticulture.

    Amazing story as that of Dominio de Pingus. Created in 1995 by Peter Sisseck, a Danish (!), this estate a few kilometres from Vega Sicilia has become a cult in less than 15 years.

    Pingus is the great wine, made from the 4 ha of the estate, 100% tempranillo aged 70 years, biodynamic since 2000. 450 cases per year (an average yield of 10hl/ha, not counting small vintages, such as the 2002, totally downgraded in Flor de Pingus).
