Basé sur le sauvignon (relevé d'une pointe de sémillon), Caillou Blanc est depuis 50 ans présenté comme l'archétype du vin blanc sec du Médoc : robe pâle, entre fraîcheur délicate et distinction aromatique (agrumes, orange amère, chèvrefeuille), jamais trop ample ou démonstratif. Et toujours raisonnablement positionné en prix.
Martin : 90/100 « Lively on the nose, it offers lemon verbena, lemon thyme and white peach scents on the nose. The palate is well balanced with an attractive waxy texture, more pithy than recent vintages with a spicy, stem ginger tinged finish. Thoroughly enjoyable. »
