Formidably surrounded (Claude and Lydia Bourguignon for agronomy, Stéphane Derenoncourt for vinification, Bernard Burtschy for the style of the wines), she manages her 12 hectares with unshakeable convictions: high density plots (10,000 vines/ha), biodynamic management (the estate was already organic before her arrival), manual harvesting in small crates, no carbonic maceration, long maturing in barrels and tuns.
