    With 10 ha in the combe of Pernand-Vergelesses, Domaine Pavelot present the best facet of Burgundy: organic viticulture thought out in the respect of the viticultural tradition (manual harvest in wicker baskets, natural yeasts, vinification 30% to 50% in whole bunches, etc. ) with the tools and achievements of today's oenology (sorting on a vibrating table, precise sulphiting of the harvest, pre-fermentation maceration, etc.) and above all, prices that are the opposite of the prevailing speculation. Their whites and reds are models of style, balance and aromatic purity.

    The Revue du Vin de France rightly hails the work accomplished by Luc Pavelot in recent vintages: “All his 2022s are intense, fragrant, with incredible density of fruit. Pure marvels with an exceptional price/pleasure ratio”.

Together with his daughter Adélie, they favour natural methods (ploughing, organic treatments, etc.) and traditional winemaking techniques (slow fermentation with indigenous yeasts, light filtration, etc.). Their wines are delicious and long-lasting, with an immediate, invigorating and authentic charm.

    Made from vines aged 50 years and over, the ‘petit’ Viré-Clessé village is a dynamic white wine, endowed with "a fruity freshness echoed by a very lively, long and balanced palate" according to the Guide Hachette 2025.

The INAO has reasons that reason does not know!

    A lifelong wine lover, Philippe Guyonnet took the plunge in 2021 by purchasing 9 hectares in Vouvray, on the advice of his friend and mentor Jacky Blot (La Taille aux Loups). With his attention to detail, he immediately opted for organic viticulture, manual harvesting and fermentation with indigenous yeasts in small containers (amphorae and barrels) . From his time in the Mâconnais region, he retains a taste for long ageing (18 to 30 months), which he finishes with bottling without fining or filtration. His Chenin wines, vinified exclusively as dry wines, have a beautiful aromatic richness (chamomile, white peach, vanilla, etc.) and a richness that is perfectly balanced by a lively acidity. 2022 is his first vintage, and already a masterstroke. Everything is in place for this estate to quickly make a name for itself.

    Made from vines aged 50 years and older, grown on flinty clay soil, Inspirations (aged for 18 months) is characterised by its finesse and liveliness.
