Even if they have exceptional ageing potential, we recommend tasting Sauternes from their earliest youth.
They do not have tannic astringency and their aromatic complexity is therefore fabulous!

    Located in Gelos, this small estate (2 ha on the top of a hill facing the Pyrenees) is the most oriental of the Jurançon appellation. Replanted in 2005 and immediately converted to organic farming, Sarros proves with its dry whites that manseng (small or large) is indeed one of the greatest French white grape varieties. These frank, vibrant wines are a credit to the appellation and offer unrivalled value for money.

    "La Vallée Heureuse" is composed of 100% small manseng. The characteristic aromas of the grape variety (pineapple and peach) are revealed behind the hazelnut notes brought by the maturing process. A harmonious gastronomic wine, with a long and delicate finish.

    After a degree in chemistry, Maxime Salharang chose, somewhat by chance, to go into oenology. He trained in several great Bordeaux châteaux (Smith Haut-Lafitte, Carbonnieux) and was introduced to biodynamics at the Domaine de Souch in Jurançon, before going into his own vineyards at Clos Larrouyat (3 ha) with his wife Lucie. The full eastern exposure and the unique specificity of the subsoil (clay and pebbles rolled on a strip of Trias) give his wines a delicate freshness, intensity, minerality and length rare for the appellation. The work and thoughtful application of the Salharang couple convince us that Clos Larrouyat is a future great of the appellation.

    "Météore" is a blend of 30% gros manseng and 70% petit manseng, aged for 6 months in non-new barrels. Fresh and delicate, lively and intense, with a marked saline touch on the finish.

    The sweet "Phoenix", a 100% small manseng, is cloudy because of its low sugar content and its freshness. The aromatic intensity (verbena, pineapple, tangerine, citrus zest) of petit manseng is expressed without heaviness thanks to its tractable vivacity and its measured liquor.

And always with the same specifications: to produce wines that are fine, precise, complex and above all representative of their terroir. To achieve this, it relies on a long-term partnership with only one winegrower per appellation (such as Château Le Cèdre in Cahors).

    Xavier Copel has already made his name in the Bettane&Desseauve guide "Careful, elegant, charming wines, whose only defect is the small quantity produced" [only 1200 to 1800 bottles per vintage].

    Plot of very old vines of 80 years old, 100% tempranillo, terraced vineyard on the southern flank of Rioja Alavesa, where the altitude (577 m) gives the wines finesse and length. Uncertified organic viticulture.

    Angelo Gaja is the figurehead of Italian viticulture. Arriving at the head of the family estate in 1961, he brought his Barbaresco to the level of the world's greatest red wines. This international recognition was achieved by remaining faithful to the local grape variety, the nebbiolo, known until then for its rusticity and tannicity. Its principles were simple but novel: halving yields, differentiating terroirs instead of blending the entire production under a single label, taking care of the ageing process and introducing innovative techniques from France such as green harvesting, malolactic fermentation in barrels, etc.

    Made from Barbaresco and blending 35% nebbiolo, 35% merlot and 30% cabernet sauvignon, Sito Moresco, both fine and spicy, is a perfect introduction to the wines of Gaja.

    Dirk Van der Niepoort, a talented Port producer, is an unusual character: quirky, visionary and intuitive. Twenty-five years ago, he set out to introduce the quality of the wines of northern Portugal, while remaining faithful to Portuguese know-how and grape varieties. He has created a plethora of vintages (more than 50!) highlighting here a terroir, there a grape variety or unconventional winemaking. Faithful to ancestral Portuguese traditions, Mr Van der Niepoort makes his red wines by blending local grape varieties: touriga nacional, touriga franca, tinta roriz, alfrocheiro, baga, jaen...

    Turris, barely 3000 bottles, from a very, very old vine (130 years old) of the Douro, planted in crowds, old grape varieties (not identifiable because they are too old!). Fine persistent tannicity and barely 11°6 of alcohol in 2016, a testimony of the past as mineral as it is complex.

    Located in the Hautes Côtes de Nuits, the Joannet family has its own orchards and has been producing liqueurs, creams and jams for 3 generations. Meticulous cultivation of the berries, preparation as soon as they are picked, exclusive use of virgin juices and sugar dosing 'to the millimeter' contribute to making their products real fruit bombs.

    Made exclusively from Noir de Bourgogne blackcurrant (a variety that is not very productive but is renowned for its incomparable fragrance), the 16% crème de cassis stands out for the freshness of its fruit and the intensity of its aromas.

    Regularly acclaimed, their crème de cassis has once again obtained the best score (19/20) in the Bourgogne Aujourd'hui tasting: "If one considers that a liqueur must be the faithful expression of the basic fruit, then this crème de cassis is a form of perfection".
